Ingredients

Scale
  • 1/2 cup unsalted butter
  • 3/4 cup macadamia nuts (finely chopped)
  • 3 tablespoons coconut oil
  • 1 ⅓ cups mashed bananas (from 3 large or 4 small very ripe bananas)
  • 3/4 cup white granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/4 cup crushed pineapple (drained)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon Diamond Crystal kosher salt
  • 1 3/4 cups all-purpose flour
  • 1/2 cup sweetened coconut flakes (plus 2 tablespoons for topping)
  • 4 tablespoons unsalted butter (for frosting, at room temperature)
  • 3 ounces cream cheese (at room temperature)
  • 1 1/2 cups powdered sugar
  • Pinch kosher salt (for frosting)
  • 2 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract (for frosting)
  • 1/4 teaspoon coconut extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Cream together the butter and sugar until fluffy.
  3. Add in the coconut oil and mix until well combined.
  4. Stir in the mashed bananas, eggs, and vanilla extract until smooth.
  5. Fold in the crushed pineapple and chopped macadamia nuts.
  6. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  7. Gradually add the flour mixture to the banana mixture, mixing just until combined. Do not overmix.
  8. Gently fold in the sweetened coconut flakes.
  9. Pour the batter into the prepared loaf pan.
  10. Bake for about 60-70 minutes or until a toothpick inserted into the center comes out clean.
  11. Let it cool for about 10 minutes before transferring it to a wire rack.
  12. For the Cream Cheese Frosting: Beat the butter and cream cheese together until creamy.
  13. Gradually add in the powdered sugar and salt, mixing until smooth.
  14. Stir in the heavy cream and vanilla extract, mixing until combined. Adjust the consistency with more heavy cream if necessary.

Notes

Use walnuts or pecans instead of macadamia nuts if preferred. Ensure bananas are very ripe for optimum sweetness.
