Juicy grilled chicken marinated in a rich coconut sauce, inspired by Thai flavors, perfect for weeknight dinners or gatherings.

Ingredients

Scale
  • 4 chicken thighs (bone-in, skin-on or boneless)
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lime juice
  • 1 tablespoon soy sauce
  • Fresh cilantro (for garnish)

Instructions

  1. Whisk together the coconut milk, fish sauce, brown sugar, garlic, lime juice, and soy sauce in a bowl.
  2. Place chicken in a zip-top bag and pour marinade over it. Seal and marinate in the fridge for at least 1 hour, or overnight for deeper flavor.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from marinade, letting excess drip off. Discard used marinade.
  5. Place chicken on the grill. Cook for about 6-7 minutes per side or until fully cooked (internal temperature should reach 165°F).
  6. Once done, let the chicken rest for a few minutes before slicing.

Notes

For substitutions, chicken breasts can be used instead of thighs. Use full-fat coconut milk for extra creaminess.
