Delightful elderberry muffins topped with a crunchy streusel, perfect for breakfast or a snack.

Ingredients

Scale
  • 1 cup elderberries (fresh or dried)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup cold butter (for streusel)
  • 1/4 cup brown sugar (for streusel)
  • 1/2 cup rolled oats (for streusel)
  • 1 teaspoon cinnamon (for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the flour, sugar, baking powder, and salt in a mixing bowl.
  3. Whisk together the milk, vegetable oil, egg, and vanilla extract in another bowl.
  4. Gradually add the wet ingredients to the dry mixture and stir until just combined. Gently fold in the elderberries.
  5. Mix the cold butter, brown sugar, rolled oats, and cinnamon until it forms a crumbly texture to prepare the streusel.
  6. Line a muffin tin with paper liners. Fill each cup about 2/3 full with the muffin batter.
  7. Sprinkle the streusel topping generously over each muffin.
  8. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  9. Allow the muffins to cool before serving.

Notes

For a healthier option, substitute whole wheat flour for all-purpose flour. Fresh elderberries have a more vibrant flavor, but dried ones work just as well.
