Ingredients

Scale
  • 1 pie crust
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 3 large eggs
  • 1 cup milk
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Nutmeg (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the pie crust in a pie dish and pre-bake for about 10 minutes until lightly golden.
  3. In a large bowl, whisk together eggs and milk until combined.
  4. Stir in ricotta cheese, chopped spinach, Parmesan cheese, salt, pepper, and a pinch of nutmeg if desired.
  5. Pour the mixture into the pre-baked pie crust.
  6. Bake for 30-35 minutes, or until the quiche is set and golden on top.
  7. Allow to cool slightly before slicing and serve warm.

Notes

You can use frozen spinach if fresh isn’t available. Fresh ricotta will give a better flavor than the packaged kind. Optional add-ins: Consider diced onions, mushrooms, or herbs for extra flavor.
