Ingredients

Scale
  • 1/2 head of cabbage (2 cups of shredded cabbage)
  • 1 medium carrot (grated)
  • 1 tablespoon dried Mexican oregano
  • 1 cup hot water
  • 1 cup apple cider vinegar
  • 1 teaspoon kosher salt
  • 1 teaspoon granulated sugar
  • 3 cups masa harina (11.8 ounces/334g)
  • 2 teaspoons kosher salt
  • 2 3/4 cups cold water
  • 2 cups shredded mozzarella (or Oaxacan cheese)
  • 1/2 cup pickled jalapeƱo peppers (diced)
  • 1/2 cup diced roasted butternut squash
  • 1 cup water

Instructions

  1. Combine the shredded cabbage, grated carrot, dried oregano, hot water, apple cider vinegar, salt, and sugar in a bowl.
  2. Let the mixture sit for at least 30 minutes to develop flavors.
  3. Mix masa harina, salt, and cold water in a mixing bowl until a soft dough forms.
  4. Divide the dough into equal portions, about the size of a golf ball.
  5. Flatten each ball into a disk, then place a spoonful of cheese, jalapeƱos, and butternut squash in the center.
  6. Fold the edges over to enclose the filling and gently flatten the filled ball again.
  7. Heat oil in a skillet over medium heat and cook each pupusa for 3-4 minutes on each side until golden brown.
  8. Serve hot with curtido on the side, with optional sour cream or salsa.

Notes

Adjust spice levels by using more or fewer jalapeƱos. Substitute the cheese for any melty option you prefer.
