Ingredients

Scale
  • 2 cups fresh peaches, sliced
  • 3 eggs
  • 1 cup milk
  • 1/2 cup sugar
  • 1/2 cup all-purpose gluten-free flour
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Butter (for greasing the dish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a baking dish with butter.
  3. In a mixing bowl, whisk together the eggs, milk, sugar, gluten-free flour, vanilla extract, and salt until smooth.
  4. Pour the batter into the prepared dish.
  5. Arrange the sliced peaches evenly over the batter.
  6. Bake for 35-40 minutes, or until the clafoutis is puffed and golden.
  7. Allow to cool slightly before serving. Enjoy warm or at room temperature.

Notes

You can use any fresh fruit if peaches aren’t available; cherries or berries work well. For a richer texture, consider using whole milk instead of low-fat. A pinch of cinnamon can add an extra layer of flavor.
