A flavorful quiche combining bacon and cheese in a fluffy egg custard, baked in a crispy pie crust, perfect for brunch or gatherings.

Ingredients

Scale
  • 1 store-bought 9-inch pie crust
  • 8 slices thick-cut bacon, cooked and crumbled
  • 1½ cups shredded sharp cheddar cheese
  • 6 large eggs, room temperature
  • 1½ cups half-and-half
  • 3 green onions, thinly sliced
  • Salt and pepper, to taste
  • ½ teaspoon garlic powder
  • 1 teaspoon Dijon mustard (optional)
  • 1 cup sautéed mushrooms (optional)
  • 1 cup roughly chopped fresh spinach (optional)
  • ½ cup diced red bell pepper (optional)

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy, about 10 minutes. Drain on paper towels and crumble. If adding veggies, save 1 tablespoon of the bacon fat.
  2. Fit the pie crust into a 9-inch pie dish and prick the bottom with a fork. No need to prebake.
  3. In a large mixing bowl, whisk together the eggs, half-and-half, garlic powder, Dijon mustard, salt, and pepper until fully combined and slightly frothy.
  4. Evenly sprinkle the crumbled bacon over the pie crust. Then, add the shredded cheddar cheese and sliced green onions. If using, scatter optional veggies over the top.
  5. Pour the egg mixture gently over the fillings, allowing it to settle naturally.
  6. Preheat the oven to 350°F (175°C). Bake the quiche on the middle rack for 40-50 minutes until the center is set but still slightly jiggly. If the crust edges brown too fast, cover them with foil.
  7. Let the quiche cool for at least 10 minutes before slicing and serving.

Notes

You can substitute turkey bacon for a lighter option. Use freshly grated cheese for the best melt and flavor.
