Delicious mini quiches that are quick to prepare and perfect for busy weeknights or brunch. Easy to customize with your favorite ingredients.

Ingredients

Scale
  • 1 pie crust (homemade or store-bought)
  • 6 large eggs
  • 1 cup milk
  • Salt and pepper to taste
  • 1 cup cheese (cheddar, mozzarella, or your choice)
  • 1 cup diced vegetables (spinach, bell peppers, onions, or your choice)
  • 1 cup cooked meat (ham, bacon, or sausage, optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and cut it into small circles to fit mini muffin tins. Place the crust in the tins.
  3. Whisk together the eggs and milk in a mixing bowl. Add salt and pepper.
  4. Mix in the cheese, vegetables, and cooked meat (if using).
  5. Pour the egg mixture into the crusts until nearly full.
  6. Bake for 20-25 minutes, or until the egg is set and the tops are slightly golden.
  7. Let them cool slightly before serving. Enjoy!

Notes

Do not overfill the crusts to avoid overflow. Mini quiches can be stored in an airtight container for up to three days in the refrigerator, or frozen for later.
