Ingredients
Scale
2 1/2 cups white chocolate morsels
6 tablespoons unsalted butter, softened and cut into 1 tablespoon (14 grams) pieces
1/2 cup heavy cream
1 tablespoon freshly grated lemon peel
1/4 cup freshly squeezed lemon juice (about 2 lemons)
1 tablespoon vanilla extract
2 teaspoons poppy seeds
1/4 teaspoon fine sea salt
Instructions
Place the white chocolate morsels and softened butter pieces in a medium-sized heat-safe bowl.
Heat the heavy cream in the microwave on high (100% power) for 1–2 minutes until it starts steaming but not boiling.
Pour the hot cream over the white chocolate and butter, ensuring all chocolate is submerged. Let it sit for 3 minutes.
Add the lemon peel, lemon juice, vanilla extract, poppy seeds, and sea salt to the mixture. Whisk until smooth.
Transfer the ganache to a shallow container and press plastic wrap directly on its surface. Refrigerate for 1 to 2 hours until firm enough to pipe.
Pair macaron shells that are similar in size and shape. Using a ½ inch (1.3 cm) round piping tip, pipe the lemon poppy seed filling onto one shell, then sandwich it with another shell on top.
Let the filled macarons rest in the refrigerator overnight to allow flavors to meld and soften for the perfect texture.
Notes
Use high-quality white chocolate for the best flavor. Fresh lemon juice and zest provide vibrant flavor.
