A quick and flavorful sheet pan dinner featuring juicy pork chops and vibrant roasted vegetables, all enhanced with zesty lemon and aromatic garlic.

Ingredients

Scale
  • 4 pork chops
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice of 2 lemons
  • Salt and pepper to taste
  • 1 pound small potatoes, halved
  • 1 pound green beans, trimmed
  • 1 teaspoon dried thyme (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine olive oil, minced garlic, lemon juice, salt, and pepper in a small bowl.
  3. Place the pork chops on a sheet pan and brush both sides with the lemon garlic mixture.
  4. Toss halved potatoes with olive oil, salt, and thyme (if using), and arrange them around the pork chops on the sheet pan.
  5. Roast in the oven for 15 minutes.
  6. Add the green beans to the sheet pan, drizzle with more olive oil, and season with additional salt and pepper.
  7. Roast for an additional 10-15 minutes, or until the pork chops are cooked through and the vegetables are tender.
  8. Serve warm, drizzling leftover juices from the pan over the top.

Notes

Ensure not to overcrowd the pan for the best browning. Adjust cooking times based on pork chop thickness. Let pork rest after cooking for juiciness.
