Ingredients

Scale
  • 1 lb (454g) Ground Beef (85/15 or 90/10 lean)
  • 1 cup (185g) Long-Grain White Rice (Rinsed)
  • 2 cups (475ml) Water (For cooking rice)
  • 2 tbsp (15g) Taco Seasoning (Chili powder, cumin, garlic, paprika)
  • 1 can (425g) Black Beans (Rinsed and drained)
  • 1 cup (150g) Sweet Corn (Canned or frozen)
  • 2 medium Tomatoes (Finely diced)
  • 2 cups Iceberg Lettuce (Shredded)
  • 1/2 cup (120g) Sour Cream (Full fat, thick)
  • 1/4 cup Fresh Cilantro (Chopped)

Instructions

  1. Cook the Rice: In a pot, combine rinsed rice and water. Bring to a boil, then reduce heat, cover, and simmer for about 18 minutes until water is absorbed. Fluff with a fork.
  2. Prepare the Beef: In a skillet over medium heat, add the ground beef. Cook until browned, breaking it apart. Drain excess fat, then stir in taco seasoning. Cook for a couple of minutes until fragrant.
  3. Assemble the Bowls: In serving bowls, layer rice, beef, black beans, sweet corn, tomatoes, and shredded lettuce. Top with a dollop of sour cream and a sprinkle of cilantro.

Notes

Feel free to swap ground beef for turkey or tofu for a lighter option. Use fresh produce for better taste and nutrition.
