A delightful peach pie using fresh peaches, bursting with sweet, juicy goodness, perfect for summer gatherings.

Ingredients

Scale
  • 6–7 medium fresh peaches, peeled and sliced (about 5–6 cups)
  • ¾ cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • Pinch of salt
  • 2 9-inch pie crusts (homemade or store-bought)
  • 1 large egg
  • 1 tablespoon water
  • 1 tablespoon coarse sugar (optional)
  • Vanilla ice cream (for serving)
  • Fresh whipped cream (for serving)
  • Caramel sauce (for serving)
  • Fresh peach slices (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and place a baking sheet on the lower oven rack to catch any drips.
  2. Peel and slice the peaches into ¼-inch slices.
  3. Toss the peach slices in a large mixing bowl with sugar, cornstarch, cinnamon, nutmeg, vanilla extract, lemon juice, and salt until evenly coated.
  4. Cook the peach mixture over medium heat in a saucepan for 5–8 minutes until slightly thickened, if desired. Allow it to cool before filling the pie.
  5. Fit one pie crust into a 9-inch pie plate and trim the edges if necessary.
  6. Spoon the peach filling into the crust and spread it evenly.
  7. Cover with the second crust or create a lattice top, sealing and crimping the edges well.
  8. Whisk the egg and water together, then brush over the crust and sprinkle with coarse sugar if desired.
  9. Bake at 400°F for 20 minutes, then lower the temperature to 375°F (190°C) and bake for another 30–35 minutes until the crust is golden brown and the filling is bubbling.
  10. Cool the pie on a wire rack for at least 2 hours before slicing, allowing the filling to set.

Notes

For a deeper flavor, substitute granulated sugar with brown sugar. Use ripe peaches for the best flavor.
