A simple and effective method to preserve the sweet taste of summer corn on the cob for year-round enjoyment.

Ingredients

  • Fresh corn on the cob (as many ears as you want to freeze)
  • Large pot of water
  • Ice water bath (a large bowl filled with ice and cold water)
  • Freezer-safe bags or containers

Instructions

  1. Choose the corn: Pick fresh, sweet corn at its peak ripeness.
  2. Prep the corn: Peel away the husks and remove the silk strands.
  3. Blanch the corn: Fill a pot with water and boil. Add corn according to size for 4-7 minutes.
  4. Cool quickly: Transfer to an ice water bath for the same time it was boiled.
  5. Package for freezing: Wrap whole cobs or slice kernels and flash freeze.
  6. Label and freeze: Write the date on each bag and store in the freezer for up to 12 months.

Notes

Look for fresh corn with green husks for the best flavor. Avoid overcrowding during blanching to ensure even cooking.
