Ingredients

Scale
  • 1/4 cup lukewarm milk (about 115°F)
  • 1 tablespoon active dry yeast
  • 2 3/4 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 1/4 teaspoons kosher salt
  • 3 large eggs (beaten)
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsalted butter (cut into cubes)
  • 1/4 cup ground cinnamon
  • 3 tablespoons light or dark brown sugar
  • 3 tablespoons white granulated sugar
  • Pinch kosher salt
  • 2 tablespoons unsalted butter (softened)
  • 4 ounces cream cheese (softened)
  • 2 cups powdered sugar (sifted)
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon heavy cream

Instructions

  1. Mix lukewarm milk and yeast in a small bowl and let sit for about 5 minutes until frothy.
  2. Combine flour, sugar, and salt in a larger bowl.
  3. Add the yeast mixture, beaten eggs, and vanilla extract to the dry ingredients.
  4. Mix until combined, then gradually add the butter cubes. Knead the dough for about 5 minutes until smooth.
  5. Place the dough in a greased bowl, cover it, and let it rise in a warm place until doubled, about 60-120 minutes.
  6. Mix the cinnamon, brown sugar, white sugar, and pinch of salt in a bowl for the filling.
  7. Roll the dough out on a floured surface to a large rectangle (about 1/4 inch thick).
  8. Spread softened butter over the dough.
  9. Evenly sprinkle the cinnamon-sugar mixture over the butter.
  10. Roll the dough tightly to form a log and cut it into 12 equal pieces.
  11. Place the rolls in a greased baking dish, cover, and refrigerate overnight.
  12. Beat the cream cheese in a bowl until smooth.
  13. Add the powdered sugar, vanilla extract, pinch of salt, and heavy cream. Mix until creamy.
  14. Preheat the oven to 350°F (180°C).
  15. Let the rolls rise while the oven preheats for about 30 minutes.
  16. Bake the rolls for 25-30 minutes until golden brown.
  17. Drizzle with cream cheese icing before serving.

Notes

For best results, use room temperature butter and eggs. Optional add-ins include nuts or raisins.
