A delightful dessert combining juicy peaches and a crumbly brown sugar biscuit topping, perfect for summer gatherings.

Ingredients

Scale
  • 5-6 medium fresh peaches, peeled, pitted, and sliced
  • 2/3 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 cups all-purpose flour (1 cup for filling thickening, 1 cup plus a bit more for biscuit dough)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 3/4 cup milk (whole or 2%, or almond milk for dairy-free)
  • 1 teaspoon vanilla extract (optional)
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Prep the Peaches: Blanch peaches in boiling water for 30 seconds and then plunge into ice water to cool. Peel, pit, and slice them into 1/2-inch thick wedges. In a bowl, toss with granulated sugar, 1 tablespoon of flour, cinnamon (if using), and vanilla extract. Let the mixture sit to draw out the juices.
  2. Make the Biscuit Topping: In a medium bowl, whisk together 1 cup of flour, baking powder, brown sugar, and salt. Cut in the cold, cubed butter until the mixture resembles coarse crumbs. Stir in milk gently until just combined; the batter should be sticky but scoopable.
  3. Assemble the Cobbler: Preheat the oven to 375°F (190°C). Pour the peaches and their juices into a greased 9×9-inch baking dish. Drop spoonfuls of biscuit batter over the peach filling, leaving gaps for the juices to bubble through.
  4. Bake: Bake in the middle of the oven until the biscuit topping is golden brown and a toothpick inserted into the center comes out clean, about 30-35 minutes. The peaches should be bubbling. If the topping browns too quickly, tent it with foil after 20 minutes.
  5. Cool Slightly Before Serving: Let the cobbler rest for about 10 minutes to thicken the juices. Serve warm, ideally topped with vanilla ice cream or whipped cream.

Notes

You can replace peaches with other fruits like berries or apples. Using high-quality peaches makes a big difference in flavor.
