Delightful scones infused with Earl Grey tea and honey, perfect for afternoon tea or breakfast.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup heavy cream
  • 2 tablespoons honey
  • 2 teaspoons Earl Grey tea leaves
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together the flour, sugar, baking powder, and salt in a large bowl.
  3. Add the cold, cubed butter. Use your fingers or a pastry cutter to blend until the mixture looks like coarse crumbs.
  4. Stir in the Earl Grey tea leaves.
  5. Combine the heavy cream and honey in another bowl. Gradually pour this into the flour mixture and stir until just combined.
  6. Place the dough on a floured surface and knead gently to bring everything together.
  7. Roll out the dough to about 1-inch thickness and cut into triangles or circles.
  8. Arrange the scones on a baking sheet lined with parchment paper.
  9. Brush the tops with the beaten egg for a nice shine.
  10. Bake for 15-20 minutes, or until golden brown.
  11. Serve warm with butter or jam.

Notes

Store scones in an airtight container for up to 2 days, or freeze for up to 2 months. Reheat in the oven for best texture.
