These Crispy Ground Beef Tacos are quick, flavorful, and perfect for a busy weeknight dinner. Enjoy rich beef and melted cheese wrapped in crispy tortillas.

Ingredients

Scale
  • 1 pound lean ground beef (90%)
  • 1 packet of taco seasoning
  • 3/4 cup red enchilada sauce
  • 2 1/2 cups Oaxaca cheese, or Monterey Jack
  • 10 corn tortillas
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Heat a skillet over medium-high heat. Brown the ground beef, breaking it up as it cooks.
  3. Stir in the taco seasoning and red enchilada sauce. Allow this mixture to simmer briefly before removing from heat.
  4. Wrap the tortillas in a damp paper towel. Microwave for 30-60 seconds, just until they become pliable.
  5. Lightly brush one side of each tortilla with olive oil. Place the oiled side down on a baking sheet.
  6. Sprinkle 2 tablespoons of cheese on one half of the tortilla.
  7. Top with 1/4 cup of the beef mixture, then add another 2 tablespoons of cheese.
  8. Fold the tortilla over the filling, creating a taco shape.
  9. Repeat for the remaining tortillas, arranging them in a single layer on your baking sheet.
  10. Bake for 16 minutes or until the tortillas are crispy and the cheese is melted.
  11. Let the tacos cool for 3 minutes before serving.

Notes

Consider adding beans or diced vegetables to the beef mixture for extra nutrition. Fresh tortillas enhance the flavor and texture.
