Quick and easy crispy chicken fritters that are perfect for busy weeknights or casual gatherings.

Ingredients

Scale
  • 2 12.5-oz cans white premium chunk chicken breast
  • 1 egg
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon dried thyme
  • 1/4 cup plain dried bread crumbs
  • Additional bread crumbs for coating
  • Vegetable oil for frying

Instructions

  1. Drain the chicken well. Let it sit in a colander for a few minutes, lightly pressing down with a rubber spatula to remove excess liquid.
  2. Chop the chicken into uniform pieces, about 1/4 inch.
  3. In a mixing bowl, combine the chicken, egg, Dijon mustard, salt, and spices. Stir with a fork until mixed well.
  4. Fold in 1/4 cup of bread crumbs until the mixture is cohesive.
  5. Pour additional bread crumbs into a shallow bowl or pie plate for coating.
  6. Portion the chicken mixture into six fritters. Shape each one into a tight “hockey puck” and then coat with the extra bread crumbs.
  7. Heat about 1/4 inch of oil in a large skillet over medium-high heat. When hot, carefully pan-fry the fritters for 3-4 minutes on each side, or until golden brown and crispy.
  8. Garnish with fresh parsley if desired. Serve hot and enjoy!

Notes

Feel free to mix in grated cheese or chopped herbs for extra flavor. For a healthier twist, substitute ground turkey or extra-lean chicken.
