A hearty and nourishing soup perfect for chilly nights, packed with flavors and nutrients.

Ingredients

Scale
  • 1 cup split peas, rinsed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Optional: herbs like thyme or parsley for garnish

Instructions

  1. Sauté the chopped onion, diced carrots, and diced celery in a splash of vegetable broth until they soften, about 5 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the rinsed split peas and bay leaf, then add the vegetable broth.
  4. Bring the mixture to a boil, then reduce the heat to low. Let it simmer for about 30-40 minutes, or until the peas are tender.
  5. Season with salt and pepper to taste.
  6. Remove the bay leaf and, if you prefer a smoother texture, blend the soup with an immersion blender.
  7. Serve hot, garnished with your choice of herbs.

Notes

Use fresh vegetables for the best flavor and consider adding diced potatoes for extra heartiness.
