A healthier twist on classic nachos featuring roasted cauliflower topped with melted cheese and fresh toppings.

Ingredients

Scale
  • 5 cups cauliflower florets (cut into ½-inch slices)
  • ½ tsp garlic powder
  • ¾ cup shredded Mexican cheddar cheese
  • ½ tsp paprika
  • ½ tsp onion powder
  • ½ cup chopped grape or cherry tomatoes
  • 1 jalapeño (sliced)
  • ½ tsp ground cumin
  • ¼ tsp chili powder
  • ½ tsp sea salt
  • ⅓ cup refried beans
  • ¼ cup diced red onion
  • ¼ cup chopped fresh cilantro
  • 1 tbsp olive or avocado oil
  • 1 avocado (sliced or chopped, optional)

Instructions

  1. Preheat your oven to 425°F. Spray a large baking sheet with olive or avocado oil cooking spray.
  2. Mix oil with onion powder, garlic powder, cumin, chili powder, paprika, and sea salt in a large bowl.
  3. Add the sliced cauliflower to the bowl. Toss gently to coat each piece in seasoning.
  4. Spread the seasoned cauliflower evenly on the baking sheet, ensuring they are spaced out to roast rather than steam. Bake for 20 minutes, until tender and starting to brown.
  5. Remove the pan from the oven. Push the cauliflower together to the center of the pan.
  6. Top the cauliflower with refried beans. Sprinkle with cheese and place jalapeño slices on top.
  7. Return to the oven and bake for an additional 6-7 minutes, until the beans are warmed through and the cheese has melted.
  8. Remove from the oven and top with chopped red onion, cilantro, and tomato. Add avocado if desired. Serve directly from the sheet pan, or transfer to a platter.

Notes

Optional add-ins: Consider adding black olives or corn for more flavor. Choose fresh, crisp vegetables for best results.
