A delicious twist on traditional chicken salad that combines the flavors of bacon, lettuce, and tomato for a satisfying meal.

Ingredients

Scale
  • 2 boneless skinless chicken breasts
  • 5 strips of bacon
  • 1/4 cup chopped green onion
  • 1/2 cup quartered cherry tomatoes
  • 1/2 cup mayonnaise
  • 1/2 tsp black pepper

Instructions

  1. Place chicken breasts in a medium saucepan. Cover them with cold water, ensuring they’re submerged by at least 1 inch.
  2. Put the pot on the stove uncovered and bring the water to a boil.
  3. Once boiling, reduce the heat to a simmer and cover with a lid. Let it simmer for 14 minutes before removing from heat.
  4. While the chicken cooks, fry the bacon in a pan over medium-low heat until crispy.
  5. Once cooked, place the bacon on a towel to drain excess grease. After a few minutes, chop it into bite-sized pieces.
  6. In a small bowl, mix together mayonnaise, chopped green onion, and black pepper.
  7. Once the chicken is cooked, remove it from the water and shred it using two forks on a plate or cutting board.
  8. In a large bowl, combine the shredded chicken, mayo mixture, quartered cherry tomatoes, and chopped bacon.
  9. Mix all ingredients until evenly combined. Enjoy immediately or store it in an airtight container in the fridge for up to 4 days.

Notes

Can add diced avocado or chopped lettuce for extra crunch. Store in airtight container in the fridge for up to 4 days.
