Scale
  • 4 catfish fillets
  • 2 tablespoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a small bowl, mix paprika, cayenne pepper, garlic powder, onion powder, thyme, salt, and black pepper.
  2. Pat the catfish fillets dry with paper towels.
  3. Rub the spice mixture all over the fillets, coating them well.
  4. Heat a large skillet over medium-high heat and add the oil.
  5. Once hot, carefully place the fillets in the skillet.
  6. Cook for about 3-4 minutes on each side until the fish is cooked through and has a nice blackened crust.
  7. Remove from heat and serve with lemon wedges.

Notes

You can substitute any firm white fish if catfish is unavailable. For a sweeter spice mix, add a pinch of sugar.
